Ingredients

  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • Fresh coriander leaves, chopped, for garnish

For Layering and Assembly:

  • Cooked basmati rice
  • Biryani masala
  • Fried onions (optional)
  • Fresh mint leaves
  • Saffron strands soaked in warm milk (optional)

Instructions

Cooking the Basmati Rice:

  1. Prepare Rice and Spices: Rinse the basmati rice under cold water until the water runs clear. In a large pot, bring 4 cups of water to a boil. Add green cardamom pods, cloves, cinnamon sticks, and salt to the boiling water.
  2. Add Rice and Cook: Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70-80% done, ensuring it is still slightly firm. Avoid overcooking the rice as it will continue to cook during the layering process.
  3. Drain and Set Aside: Once the rice is partially cooked, drain it using a colander or sieve. Remove the whole spices and set the rice aside.

Preparing the Biryani Masala:

  1. Sauté Onions and Tomatoes: Heat vegetable oil or ghee in a large skillet or pot over medium heat. Add thinly sliced onions and sauté until they turn golden brown and caramelized. Add chopped tomatoes and green chilies, and cook until the tomatoes are soft and pulpy.
  2. Add Ginger-Garlic Paste and Spices: Stir in ginger-garlic paste and cook for a minute until the raw aroma dissipates. Add red chili powder, ground coriander, turmeric powder, garam masala, and salt. Mix well to combine, allowing the spices to bloom and release their flavors.
